This is the ‘stirred’ plain yogourt you may have grown up eating – it has a very light and loose in texture, and a lightly pearlescent appearance. Its very fresh, clean flavour has just a hint of sweetness to it (thanks to the natural sugars in milk) and a nice acidic zing on the finish. Quark is a fresh cheese that’s popular in Germany and other European countries. We first launched it to serve our clientele from Montreal’s ethnic communities, and it’s grown popular with the general public. It looks and spreads like cream cheese, but its flavour is much more yogourt-like. It’s ‘dry’ and a little mouth-puckering, like a very tannic wine. This fermented milk beverage is much more liquid than our non-effervescent kefir, and is brimming with tiny bubbles created by natural yeasts. Deeply tangy, and with 40% butterfat, a little goes a long way. It adds luxuriant texture and a gorgeous finishing sheen to pan sauces. It’s somewhat firm right out of the fridge, but softens to dense silk on stirring. Don’t overdo it! Brilliant on pumpkin pie, fresh berries, in potato gratins, and blue cheese dressings.
