Nuttiness
Humans have been eating nuts for over ten thousand years. (In fact, this is one of the reasons our jaw muscles evolved to be so strong.) Their taste is hard to describe—it’s a combination of a roasted or toasted flavour and a buttery mouthfeel created by the oils in the nuts. That’s why roasting nuts makes them taste nuttier. As a flavour component, nuttiness can be an interesting attribute of many other foods as well: coffee, brown butter, chia seeds, roasted grains, certain hard cheeses, and even champagne.
